TCM Cooling Cucumber Salad
We’re all looking for easy, delicious, and cooling summer recipes, right? Well, you’ve stumbled upon a winner! This cooling cucumber salad recipe is one that I can whip up in under 10 minutes and munch on whenever I crave (which is pretty often).
What You’ll Need:
- 1 Fresh cucumber (double or triple the recipe if you’re sharing!)
- 3 Cloves of garlic
- 2 cups Rice wine vinegar
- Splash of sesame oil
- Cracked black pepper
Directions:
Start by washing and chopping up your cucumber. It doesn’t have to be perfect, just nice bite sized pieces. Add this to a bowl.
Next, crush/mince your garlic and add it into the bowl.
Measure out and pour in your rice wine vinegar and sesame oil.
Add cracked black pepper to taste.
You can let this mixture marinate in the fridge for an hour or so to lock in all the juices, or you can eat it straight away!
This salad is not only delicious, but it does an excellent job at cooling and balancing your digestive fire. In the summer our digestive fire is at its peak, and eating cooling foods can help to maintain healthy digestion all summer long.
